Jalapeño Cheddar Corn Dogs

Ingredients

  • 8 hot dogs
  • 8 wooden skewers
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup chopped pickled jalapeños
  • 1/2 cup shredded cheddar cheese
  • Vegetable oil (for frying)

Instructions

Step 1: Prepare the Hot Dogs

  1. Pat the hot dogs dry with paper towels. Insert a wooden skewer into each hot dog, leaving enough of the skewer exposed as a handle.
  2. Set the skewered hot dogs aside while you prepare the batter.

Step 2: Make the Batter

  1. In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, whisk together the buttermilk and egg until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but smooth.
  4. Fold in the chopped jalapeños and shredded cheddar cheese until evenly distributed.
