Ingredients
- 8 hot dogs
- 8 wooden skewers
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 1/4 cup chopped pickled jalapeños
- 1/2 cup shredded cheddar cheese
- Vegetable oil (for frying)
Instructions
Step 1: Prepare the Hot Dogs
- Pat the hot dogs dry with paper towels. Insert a wooden skewer into each hot dog, leaving enough of the skewer exposed as a handle.
- Set the skewered hot dogs aside while you prepare the batter.
Step 2: Make the Batter
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the buttermilk and egg until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but smooth.
- Fold in the chopped jalapeños and shredded cheddar cheese until evenly distributed.
